Homemade Dips

These are our family’s three favourite dips. They are quick and easy in the Thermomix and we make them to take to parties or when we don’t have much to put on sandwiches at lunch.

Hommus

2 cloves Garlic
400g can of Chick Peas
40g Lemon Juice (use fresh lemon)
2 tbsp. Tahini
1-2 tbsp. Oil
Salt and Pepper to taste

Put the garlic in the TM bowl and chop for 5 seconds on speed 7
Put all the other ingredients in and mix for up to 1 minute on speed 4, or until it is as smooth as you want. For a courser dip use 20-30 seconds.

Basil Pesto

1 large clove Garlic
40g fresh Basil leaves
Small handful of Parsley (optional)
160g Unsalted Cashews
80g Olive Oil
2 tbsp. White Vinegar
4 tbsp. Parmesan Cheese (pre-grated in Thermomix)

Place all ingredients into TM bowl and set dial to closed lid position.
Pulse with Turbo button for 5-10 seconds (about 4 pulses) so that you have a rough but even chopped mixture.

Capsicum & Sundried Tomato

1 clove of Garlic
150g drained Sundried or Semi-Sundried Tomatoes
1 red Capsicum, cut into quarters
160g Unsalted Cashews
40g Olive Oil
40g White Vinegar
2 tbsp. Parmesan Cheese (pre-grated in Thermomix)

Place all ingredients into TM bowl and set dial to closed lid position.
Pulse with Turbo button for 5-10 seconds (about 4 pulses) so that you have a rough but even chopped mixture.
